The Cardinals want some luck this weekend, so making an incredible breakfast on Sunday morning is a superb begin!  You understand I am all about consuming good grass-feed proteins, and this recipe incorporates two of my favorites!  It is prepared in an hour within the Immediate Pot, so begin early and CHOW DOWN!

 

 

 

 

Southwest Sport Day Steak N’ Eggs

 

Prep Time: 15 minutes / Prepare dinner Time: 70 minutes / Servings: 4

 

Substances: 

  • 2 lbs. Open Nature Grass-Fed NY Strip Steak (Safeway)

  • 1/Four cup olive oil

  • 2 cups inexperienced chile enchilada sauce (Las Palmas)

  • 1 cup salsa verde (Del Actual)

  • 16 oz. frozen diced potatoes or Southern type hash browns

  • 2 tbsp. finely chopped contemporary rosemary 

  • 1 giant jalapeno pepper, thinly sliced, membrane and seeds eliminated

  • 4-6 Hickman’s Grass-Fed or Cardinals packaging eggs

  • salt/pepper

Steps: 

  1. Set the InstantPot to Sautee and add about 2 tbsp. olive oil.  When the InstantPot is as much as temperature, add the Grass-Fed Beef and season with salt and pepper. Sear for 2-Three minutes on all sides (you might want to do that in two batches).  Take away the meat from the InstantPot and add the enchilada sauce and the salsa verde.  De-glaze the underside of the InstantPot with the sauces.  And add the meat again in, cowl, lock and seal the InstantPot.  Set the Pot to “Strain Prepare dinner” on excessive strain for 40 minutes.  When the timer is completed, permit the steam to naturally launch for 20 minutes.

  2. Whereas the InstantPot is releasing the steam, warmth a big skillet to medium warmth and add the rest of the olive oil.  Add the diced potatoes, the sliced jalapenos and the chopped rosemary.  Season with salt and pepper.
